Research Park Meatloaf

4 to 6 pounds lean ground beef
1 medium onion, diced
1 tablespoon chopped fresh garlic
1/2 teaspoon celery seed
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Dijon mustard
1/4 cup fresh parsley, chopped
3 whole eggs
2 cups fresh bread crumb
2 cups diced tomato
1 tablespoon worcestershire sauce

Place all ingredients together in a large mixing bowl.

Mix very well.

Form into a loaf.

Place loaf in a roasting pan.

Bake at 350 degrees for about 35-45 minutes.

Remove from the oven and allow to stand for 15 minutes

Top with BBQ sauce, Catsup, or onion & green pepper rings.

CHEF'S TIP:
It's a whole lot easier just to visit me for lunch on meatloaf day.

Serves 16 to 24
(I know that is a lot, but left overs make great sandwiches!)
